Ingredients
½ Cup granulated sugar
½ Cup brown sugar
½ Cup peanut butter
1/2 Cup crisco
1 Tablespoons powdered egg replacer (for this recipe I used Neat Egg)
¼ Cup applesauce
11/4 Cup all purpose flour
¾ Cup teaspoon baking soda
1/2 Cup teaspoon baking powder
¼ teaspoon salt
Prep Time: 20 Minutes, Cook Time: 10 Minutes, Chilling Time: 2 Hours (or can prepare a day before)
Directions
- Mix the brown sugar, granulated sugar, peanut butter, crisco and powdered egg replacer in a large bowl. Stir n remaining ingredients. Cover and refrigerate about 2 hours or until firm. (You can prepare this recipe the night before).
- Heat oven to 375F.
- Shape dough into 11/4inch balls. Place about three inches apart o ungreased cookie sheet. Flatten slightly with a fork.
- Bake 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.
